Japanese curry is a great quick dinner option during the work week. It requires only potatoes, carrots, and onions. You can use impossible meatballs or actual meat for a savory flavor. Another option is water chestnuts which have a great crunch and come canned in Walmart’s asian food aisle.
Step 1: Chop your veggies. You can blitz an onion in your food processor so your eyes stay dry and your kids won’t see onion in the food. Peel potatoes and carrots then cut into 1/2 inch pieces.
Step 2: prep your savory ingredient and then cook it in 2 tablespoons of oil in a sauce pan. Once it is cooked, pull it out to rest and place your veggies and more oil back into the sauce pan. Cook the onion until it starts to brown and then add water and cover while simmering.
